first of the season

Last night the first catfish large enough to spend time cleaning was caught. 3lbs, 14 oz.
Congratulations, Jacob!

Yay- Jacob!!!! How do you cook catfish? I've had it at restaurants but never attempted cooking one myself....

I soak it in seasoning salt overnight, then dip it in buttermilk and corn meal (some people use flour). Then fry it. I prefer doing it in nugget-sized pieces, but my parents always did it in larger sizes.
